RADICCHIO RISOTTO (Winter Harmony Guide)

Ingredients:

1 1⁄2 cups risotto rice
1 small radicchio, sliced
1 shallot, minced Vegetable broth, hot Olive oil, sea salt 1/2 cup toasted hazelnuts

Instructions:

Sauté shallot in olive oil, add radicchio, then rice. Toast briefly. Add broth gradually, stirring until creamy and al dente. Top with hazelnuts and raw radicchio.

Benefits:

A bitter-sweet warming dish that supports liver and gallbladder function.
