WINTER SQUASH & HERB SALAD WITH GINGER-LIME DRESSING (Spring Digestion Guide)

Ingredients:

1 small winter squash (winter melon or any squash), peeled and cubed
1 handful alfalfa sprouts
1 generous handful microgreens (sunflower, radish, or mustard preferred)

Dressing:
1–2 scallions, sliced
1/2 bunch fresh cilantro 1/2 bunch fresh mint
1 tsp grated fresh ginger Juice of 1 orange
1 tbsp coconut aminos

Instructions:

Steam squash for 10–12 minutes until fork-tender but not mushy. While warm, toss gently with microgreens and sprouts. Blend together the herbs, scallions, ginger, lime, aminos to make the dressing. Pour over squash and combine.
