BUCKWHEAT BREAD (Spring Digestion Guide)
Ingredients:
2 cups buckwheat groats
3 cups water (for soaking)
1 organic apple, diced
2 tsp sea salt
Optional: 1 Tbsp aluminum-free baking powder
Instructions:
Soak buckwheat groats in water for 1–4 hours. Strain and rinse thoroughly to remove the slimy coating. Blend groats with diced apple until mostly smooth. Add sea salt and, if using, baking powder. Blend again to combine. If the mixture is too thick, add a small splash of water. Pour into a parchment-lined loaf pan. Bake at 425°F for 50–60 minutes, until crusty and golden brown. Let cool before slicing.
