Creamy Mushroom Soup (Autumn Equinox Guide)

Ingredients:

16 oz mushrooms, sliced 2 leeks, sliced
Juice of 1⁄2 lemon
4 cups vegetable broth 1 tsp thyme Sea salt, to taste

Instructions:

Simmer leeks and mushrooms in broth with thyme for 20 minutes. Blend until smooth. Stir in lemon juice before serving.
