Braised Fennel with Coconut Yogurt Sauce (Autumn Equinox Guide)

Ingredients:

2 fennel bulbs, sliced
2 tbsp coconut aminos
1⁄2 cup coconut yogurt
1 tsp lime zest
Juice of 1⁄2 lime
1 tsp fresh tarragon, chopped Sea salt, to taste

Instructions:

Braise fennel in coconut aminos and a splash of water until tender. In a bowl, whisk coconut yogurt with lime zest, lime juice, sea salt, and tarragon. Serve fennel with yogurt sauce drizzled on top.
