Harvest Soup (Autumn Equinox Guide)
Ingredients:
3 fennel bulbs, chopped 2 leeks, sliced
1 bunch celery, chopped 1 daikon radish, chopped 1 tbsp tomato paste 1 tsp paprika
1 tsp thyme
Zest of 1 orange
2 bay leaves
6 cups water or vegetable broth 4 tbsp coconut aminos
Instructions:
Sauté fennel, leeks, and celery briefly in a little broth. Add tomato paste, paprika, thyme, orange zest, bay leaves, daikon, and remaining broth. Simmer 30–40 minutes until vegetables are tender.
