Pumpkin Kale Soup (Autumn Equinox Guide)

Ingredients:

3 cups vegetable broth
3 cups sliced leek
1 large bunch kale
1 Japanese pumpkin, peeled and cubed 1 tsp sage 1 tsp nutmeg

Instructions:

Simmer leeks and pumpkin in broth until tender. Add kale, sage, and nutmeg. Cook until kale is softened. Blend partially if desired for a creamy texture.
