CHINESE CELERY & DAIKON SOUP (Winter Solstice Guide)

Ingredients:

1 bunches Chinese celery, chopped (leaves reserved)
1 leek, sliced
1⁄4 cup short-grain white rice 1 tsp dried thyme
Water or light vegetable broth Sea salt and black pepper, to taste

Instructions:

Heat a small amount of oil or soy sauce in a saucepan over medium heat. Add leek and sauté until soft and translucent, about 3–5 minutes. Add celery ribs and sauté until softened, about 5 minutes.

Add water or broth and bring to a boil. Stir in rice and thyme, return to a boil, then reduce heat to medium-low. Partially cover and simmer until rice is fully cooked, adding more liquid if needed.

Stir in reserved celery leaves, salt, and pepper. Cover and cook briefly until leaves wilt. Optional: blend until smooth. Serve hot.
