Zucchini & Mushroom Summer Burgers (Summer Immunity Guide)

Ingredients:

1 zucchini, steamed and mashed
1 portobello mushroom, grilled or roasted 3 iceberg lettuce leaves
1 cup sun-dried tomatos
1 tbsp olive oil
1 tbsp maple syrup
1 tsp paprika

Instructions:

Steam zucchini and score diagonal lines along it, not cutting all the way through. Place mushroom and zucchini (like a hot dog!) into lettuce cups. Glaze with the sun-dried tomato purée, brushing into the scored gaps of the zucchini to maximize flavor.
