Arugula Avocado Cooling Salad (Summer Immunity Guide)

Ingredients:

2 cups arugula
1⁄2 avocado, sliced
3 radishes, thinly sliced
1 sprig fresh tarragon, chopped

Dressing: ‍ ‍1 tbsp honey mustard (vinegar-free) 1 tbsp raw honey
1 tbsp olive oil (optional)
Juice of 2 lemons

Instructions:

Whisk dressing ingredients. Toss with salad just before serving.
