Summer Dumplings (Summer Digestion Guide)
Ingredients:
1 cup grated carrot
1 cup shredded red cabbage 1 cup shredded lettuce
3 tbsp tahini
Juice of 1 lemon
6–8 rice paper sheets
Instructions:
Toss carrots, cabbage, and lettuce with tahini and lemon juice until evenly coated. Soften rice paper sheets in warm water one at a time. Fill each sheet with 2–3 tablespoons of slaw, then fold and roll into raw dumplings. Serve immediately or chill lightly.
