Quinoa Cucumber Summer Salad (Summer Digestion Guide)
Ingredients:
2 cucumbers, thinly sliced
1⁄2 cup cooked quinoa
1⁄2 cup steamed carrots, cubed
1 tbsp pumpkin seeds
Juice of 1⁄2 lemon
1 tbsp tamari or coconut aminos Pinch of lemon zest or sea salt
Instructions:
