Summer Noodle Soup (Summer Solstice Health Guide)

Ingredients:

3 heads bok choy, chopped
1 bunch Swiss chard, chopped
3 sticks celery, chopped
1 butternut squash spiralized into noodles
3 leeks, sliced
3 tbsp Rice Molasses or Coconut Aminos to taste

Instructions:

Simmer all vegetables in 4 cups water for 30 minutes. Add in the butternut squash the final 10 minutes. Stir in seasoning of choice and enjoy!
