Summer Collard Wraps (Summer Solstice Health Guide)
Ingredients:
3 carrots, grated
3 beet, grated
2 apples, grated
1 scallion, chopped Juice of 3 lemon 2 tbsp honey
1/2 tsp paprika
1 bunch collard greens
1 handful of alfalfa sprouts
1 large heirloom tomato, sliced
Instructions:
Mix lemon juice and honey to form a light dressing. Toss with grated vegetables and scallions. Serve on collard wraps with a slice of tomato and a handful of sprouts.
