SHITAKE & LOTUS ROOT SOUP (Spring Digestion Guide)
Ingredients:
8 dried or fresh shiitake mushrooms, sliced
1/2 lotus root, sliced
1/2 large daikon or white radish, chopped 4–5 cups vegetable broth or water 1 piece ginger, sliced
1 tbsp few goji berries
1 strip kombu
Instructions:
Simmer all ingredients in broth for 30 minutes. Adjust seasoning. Let sit 5 minutes before serving to allow flavors to deepen. Add coconut aminos to taste.
