Pumpkin Soup (Autumn Digestion Guide)
Ingredients:
1 medium pumpkin, peeled and chopped
1 bunch scallions or 1 leek, sliced
6 cups vegetable broth or water
1⁄2 cup toasted pumpkin or sunflower seeds Juice of 1⁄2 lemon (optional)
Instructions:
Steam or boil pumpkin until soft.
Blend with broth until creamy.
Stir in scallions or leek.
Garnish with toasted seeds and lemon juice.
