YAM, DAIKON & SCALLION SOUP (Winter Solstice Guide)
Ingredients:
1 cup yam, sliced
1 cup daikon, sliced
1 bunch scallions, chopped 5–6 cups water or broth Salt to taste
Instructions:
Simmer yam and daikon until soft. Add scallions and cook briefly. Season and serve hot.
