HOT COCONUT SOUP (JAN 5-20)
Ingredients:
1 stalk lemongrass, smashed
1 inch galangal or ginger, sliced 3 kaffir lime leaves
1 can full-fat coconut milk
2 cups vegetable broth
1 tablespoon tamari
1 tablespoon lime juice
Fresh cilantro
Instructions: Simmer lemongrass, galangal, lime leaves, broth, and coconut milk for 10 minutes. Season with tamari, lime, and garnish with cilantro.
