APPLE & LEEK VELVET SOUP (JAN 5-20)

Ingredients: (Serves 4)

2 leeks, sliced
2 apples (red and green), chopped 2 medium potatoes, diced
1 teaspoon smoked paprika Vegetable broth
Olive oil, sea salt
Fresh thyme

Instructions: Cook leeks, apples, and potatoes with broth and simmer 25–30 minutes. Blend until smooth. Season with paprika, thyme, olive oil, and salt.

Benefits: A warming sweet winter soup that nourishes qi and fluids.
