Cooling Lettuce Wraps (Mind Detox Guide)
Ingredients:
1 head lettuce (iceberg or romaine) 1 cucumber, diced
1⁄2 a head of cabbage
1 large eggplant 1 bunch scallions
Instructions:
Sautee the eggplant, cabbage and scallions with maple syrup + coconut aminos. Add to a bowl with diced cucumber and stir. Assemble all ingredients into lettuce leaves. Wrap and serve.
