SPINACH & LEEK SWEET POTATO QUICHE (Clear Gallbladder Guide)
Ingredients:
Crust:
1 large sweet potato, steamed/roasted and mashed
1/4 cup arrowroot flour (or almond flour) Pinch of salt
Filling:
3 leeks, thinly sliced
4 cups spinach, lightly steamed or sautéed
1/4 cup mashed white beans (optional) 2 tbsp coconut amnios
1 tsp cumin
Instructions:
Mix crust ingredients and press into a small pie dish. Prebake at 375°F for 15 minutes. Meanwhile, sauté leeks in a little Water, coconut aminos and cumin. Combine with spinach, lentils/beans, and spices. Fill crust and bake another 20–25 minutes until set.
