SPRING ROLLS (Early Spring FEB 3-18)
Ingredients:
8 rice paper sheets
1 cup mixed greens
1⁄2 cup thinly sliced carrots
(Spleen support, nourishes Blood)
1⁄2 cup sliced cucumber
(clears Liver heat, hydrates the lungs, and clears inflammation)
1⁄2 small avocado, thinly sliced, optional for taste Fresh herbs (chives ideal or e.g., cilantro, mint, or basil) (aids digestion)
1 tsp lemon juice
(Liver cleanse & Qi movement)
2 tbsp coconut aminos
Instructions:
1. Wash ingredients and slice vegetables into thin strips 2. Dip each rice paper sheet in warm water for 5-10 seconds until soft.
3. Lay flat and essemble Rolls: Place mixed greens and veggies on rice paper. Drizzle with coconut aminos, squeeze lemon juice, and sprinkle with herbs.
4. Fold in the sides and roll tightly from the bottom.
5. Enjoy fresh as a snack or appetizer. Optionally, serve with tamari or soy dipping sauce.
