Sweet Glazed Eggplant (Autumn Digestion Guide)
Ingredients:
2 medium eggplants, thinly sliced 3 tbsp coconut nectar
Instructions:
Preheat oven to 350 °F (175 °C). Layer sliced eggplant in a baking dish. Brush each layer with coconut nectar. Bake for 30 minutes until tender.
