SWEET ADZUKI BROTH (Start of Summer Guide)

Ingredients:

1 cup dry adzuki beans (soaked 24 hrs, drained)
4 cups water (for cooking beans) 2 tbsp coconut sugar (adjust to taste) Pinch of sea salt

Instructions:

Rinse soaked beans and cook in fresh water until soft (about 45 minutes). Once tender, drain and return to pot with 2 cups fresh water. Simmer on low for 10–15 minutes. Add coconut sugar and a pinch of sea salt. Stir gently until dissolved. Simmer until slightly thickened. Serve warm.
