Cabbage, Tofu, & Mushroom Stew (Liver & Skin Guide)

Ingredients:

2 cups cabbage, chopped
1 block firm organic tofu, cubed (recommended to use Pumfu as a soy-free alternative)
1 cup shiitake mushrooms, sliced
2 cups vegetable broth or water
1 tbsp coconut aminos
1 tbsp goji berries
2 tbsp fresh chives

Instructions:

Sauté ginger in a pot for 2 minutes. Add cabbage, tofu, and mushrooms, goji berries, stirring for 5 minutes. Add vegetable broth and coconut aminos, then simmer for 20-25 minutes. Serve warm with fresh chopped chives.
